📋 Part 1: Setup (Tonight)

Clear the counters. Only keep these specific items out.

Tools (Minimal)

4 Baking pans (9x13 inch) Sous Vide Stick & Container (Filled with water) Vacuum Sealer & Bags (Or heavy duty Ziplocs) 3 Baking trays (Set aside for tomorrow) 1 Skillet/Frying Pan (For sausage) 1 Large Glass Measuring Cup (Microwave safe) 1 Large Mixing Bowl (For sweet mix) Blender (For savory mix)

Ingredients

Butter, Eggs (24), Milk, Brown Sugar Texas Toast (3), Hash Browns (1 bag) Sausage (1lb), Bacon (3lbs), Cheddar (4 cups) Spices, Cinnamon, Vanilla Tamales (Locate them now, keep in fridge)

🌙 Part 2: The Night Before Prep

Step 1: Start the Bath "Dan, fill the sous vide container and set the temperature to 147°F." Step 2: Cook the Sausage "Dan, brown the 1lb of sausage in the skillet. Break it up well." Lisa: While he cooks, you ensure the baking pans are laid out. Step 3: Cool & Clean "Dan, put the cooked sausage in a bowl to cool. Wash the skillet now." Step 4: Bag the Bacon Lisa: The store packages leak! Take the bacon out and Vacuum Seal it. Goal: Flat packages. If using Ziploc, use water displacement to remove air. Step 5: The Drop "Dan, drop the sealed bacon into the 147°F water. We are cooking it overnight." Step 6: The Butter Base "Dan, put 1 and ¾ cups of butter in the glass measuring cup. Melt it in the microwave." Step 7: Coat the Pans Lisa: While Dan pours the butter (½ cup in 3 pans, ¼ cup in the 4th), you grab the Brown Sugar and Hash Browns.

"Dan, put the rest of the butter sticks back in the fridge. Keep the glass cup out." Step 8: Sugar & Potato Base Lisa: You mix 1 cup Brown Sugar into the 3 butter pans. "Dan, spread the hash browns into the 4th pan."

Lisa: Trash the bags now. Step 9: The Solids Layering Lisa: You layer the Texas Toast (2 layers per pan). "Dan, layer the COOLED sausage and the Cheese onto the potatoes."

"Dan, clear the counter. Throw away bags, put leftover Cheese/Bread clips back in pantry." Step 10: The Sweet Mix (Large Bowl) "Dan, in the Big Bowl: 12 eggs, 4 ½ cups milk, 3 tsp vanilla, 6 tbsp cinnamon. Whisk it." (Use the dirty butter cup to measure the milk). Step 11: The Savory Mix (Blender) "Dan, in the Blender: 12 eggs, 1 tsp onion salt, ½ tsp pepper, ½ tsp dry mustard, ½ tsp seasoned salt. Blend. Then add 1 ⅔ cups milk and mix." Step 12: The Pour "Dan, pour the Sweet mix over the 3 Bread pans. I'll pour the Blender mix over the Potato pan."

"Dan, rinse the Big Bowl, Measuring Cup, and Blender immediately. I'll put the spices/milk away." Step 13: Storage "Dan, cover all 4 pans with foil. Move them to the fridge." Bacon stays in the water bath all night!

☀️ Part 3: Christmas Morning

⏰ 9:15 AM - Wake Up & Rescue Bacon

Pull the Bacon "Dan, take the bacon out of the water. KEEP THE WATER RUNNING (we need it for Tamales)." Start the Heat "Dan, turn Oven and Traeger to 350." Prep the MightyLite "Dan, heat up the ML400 with hot water, then dump/dry it."

⏰ 9:30 AM - Cooking

Load the Casseroles "Dan, casseroles in the oven (foil ON). Timer for 30 mins." Dry & Tray Bacon Lisa: Open the bacon bags. Pat the bacon dry with paper towels (important for crisping). "Dan, lay the bacon on the Traeger trays." Load the Traeger "Dan, put the bacon on the Traeger. It's fully cooked, so just watch for crispness (approx 10-15 mins)."

⏰ 10:00 AM - Uncover

The Reveal "Dan, take the foil OFF the French Toast pans. Bake 15 more minutes."

Clean As You Go

"Dan, pull the bacon when crispy. Wrap in foil. Throw dirty foil/paper towels away."

⏰ 10:15 AM - Storage & Table

Load the ML400 "Dan, stack the covered pans and bacon in the carrier." Table Setup Lisa: Help Dan set plates/napkins for 13. Cold Items Out "Dan, get the Orange Juice, Apple Juice, Water, Cheese Ball, and Fruit out."

Lisa's 10-Minute Warning Lisa, go freshen up, fix your hair, smooth your skirt out, and push up your tits. You have 10 minutes!

⏰ 11:00 AM - Brunch & The Tamale Drop

Serve "Dan, open the ML400. Sprinkle powdered sugar on the French Toast. Let's eat!" The Tamale Drop "Dan, drop the bag of Tamales into the 147°F Sous Vide water. We'll eat them later." Timing Note: They need at least 1 hour to heat through, but they can safely stay in the bath for up to 4 hours.
